Whats New?


Happy New Year!  Aspen Lodge celebrated Chinese New Years this weekend, and it went off with a bang!  There was authentic Chinese cuisine, live music and dancing, sword and martial art performances and a great time with old and new friends.  You are all invited to come back again on February 16th for our Valentines Day celebration! We will have live music from Dick Orleans and the festivities start at 7pm.
We are excited to kick off the New Year (Chinese New Year), with our new chef, Chef Will from Chicago.  He is very excited to be here, and has some great ideas for our restaurant, some of which are already in place – come and experience his food first hand and see for yourself what’s new!  We will have new restaurant hours starting this week.  We will be open Thursday and Friday for dinner at 5pm, Saturday for lunch and dinner starting at 11am, and Sunday for brunch, lunch and dinner starting at 10am.

Our Kitchen to Yours

Carrot Ginger Mashed Potatoes

      3 Organic Potatoes
      2 Cups Organic Carrots
      1 Tablespoon of Fresh Organic
         Ginger
      2 Ounces of Butter

Peel the potatoes and cut the carrots into large chunks.  Boil together the potatoes, carrots and ginger.  After the water comes to a boil and the potatoes are soft, strain.  Save ¼ cup of the juice and add back to the potatoes, carrots and ginger.  Add butter with salt and pepper to taste.  Mash together, and serve as your favorite side!

Employee Spotlight: Chef Will

My restaurant experience started at the age of 12, when I quit one job to start working with my Uncle Ivo Manchetti who opened Il Vicinato; an Italian restaurant in Chicago’s little Italy neighborhood.  I worked side by side with my Uncle and my Uncle’s mother, Enos, who mad her ravioli’s from scratch.  I still use her recipe’s to this day.  When I was 19 I entered a Chef Olympics at the Chicago Convention Center, and missed medaling by one point.  That was when I realized t hat cooking was what I wanted to do in life.  At that time I was the Executive Chef of Café ’36 in La Grange, Illinois, and we were receiving excellent reviews.  I went on to open a variety of other ventures with them and one of my own, Williams Catering.  I was then asked to enter into a partnership at Zing, a restaurant in a quaint little resort town in Michigan.  The restaurant blossomed in a matter of months and received excellent press.  After a short tenure, I moved back to Chicago where I served many dignitaries, Kings and Presidents at The Westin Hotel.  After vacationing in the beginning of 2013 in Estes Park, Colorado, I realized I was home.  I am very glad to be a part of Aspen Lodge, and look forward to the prosperous years to come.

Many people want to change the world with physical force or emotion.  There are very few people willing to change themselves to change the world.  The world never functions through your own will.  You either become slaves of the material world or you become masters.  You don’t live for others but live for yourself.  The quality of your spirit sets the measurement for how you see the world.
